Fish Pops for a Summer Party!
/Is it safe to (finally) say that summer has arrived? I'm hoping so! It's time for sprinklers and pool parties! To celebrate, top a cake with these fish pops for an under-the-sea party. Here in Brooklyn we have a blowup pool in our small backyard and my husband and I squeeze right in there with the kids! The lollipops would make great party favors too.

Solid Orange Fish

parchment paper
2 1/2 Jolly Rancher or orange Life Saver candies
1 black nonpareil
stick
1. Preheat the oven to 275°F. Line a baking sheet with parchment paper.
2. Arrange the candy on the baking sheet as shown, with the tail piece 1/8"to 1/4" away from the body.
3. Place in the oven for about 5 minutes. Remove and let cool for 1 minute.
4. Reshape, exaggerating the shape, especially the mouth and tail, which will spread when reheated.
5. Return to the oven for 1 to 2 minutes to smooth. Remove and let cool for 30 seconds.
6. Add nonpareil as an eye. Add the stick by putting it on the bottom and twisting to coat with candy. Let cool on the baking sheet.
Orange-and-White-Striped Fish Pop

4 pineapple Lifesavers (3 whole and 1 cut in half)
1/2 Jolly Rancher or orange Life Saver candy, cut into shards for stripes
toothpick
1 black nonpareil
stick
1. Preheat the oven to 275°F. Line a baking sheet with parchment paper.
2. Arrange the Lifesavers on the baking sheet as shown.
3. Place in the oven for about 6 minutes. Remove and let cool for 1 minute.
4. Reshape, exaggerating the shape, which will spread when reheated.
5. Return to the oven for 1 to 2 minutes to smooth. Remove and let cool for 30 seconds
6. Press the orange candy shards onto the fish in a striped pattern.
7. Return to the oven for 2 minutes. Remove and let cool for 30 seconds.
8. Drag a toothpick through the stripes. Add the nonpareil as an eye. Add the stick by putting it on the bottom and twisting to coat with candy. Let cool on the baking sheet.
